MISS MATTIE'S HOMEMADE CHICKEN
AND RICE
 
1 whole chicken
2 c. rice
5 c. water
1 stick butter
2 cans cream of mushroom soup

Place chicken in center of large roasting pan. Pour rice all around it. Mix water with soup and pour around and on top of rice. Cut butter into pats and place around the chicken. Season with salt and pepper. This cooks beautifully overnight at 200 degrees with a cover on. The children love it!
