PUMPKIN - DATE BREAD | |
1-1/4 c. sugar 1/4 tsp. baking powder 1 tsp. baking soda 3/4 tsp. salt 1/2 tsp. ground cloves 1/2 tsp. nutmeg 1/2 tsp. cinnamon 1/2 c. salad oil 1/2 c. water 1 c. canned pumpkin 2 eggs 1/2 c. chopped dates 1/2 c. chopped nuts (optional) 1-2/3 c. flour Sift dry ingredients together; place in a large bowl and add remaining ingredients in the order given; mix well. Spoon batter into a greased 9 x 5 x 3 inch loaf pan and bake at 325 degrees for 75 - 90 minutes until bread pulls away from sides of pan and toothpick inserted in center comes out clean. Cool in pan on wire rack. (Can be made in 3 tiny loaf pans; bake at 325 degrees for 60 to 75 minutes.) This bread freezes well. |
