PANCAKE BURGER 
Meat Mixture Prep.:

1 1/2 lbs. ground beef
1/3 cup chopped onion
1 tsp. salt
2-3 tsp. chili powder
1 can (1 lb.) tomatoes
1 can (1 lb.) whole kernel corn
1 can (8 oz.) tomato sauce

Brown beef and onion, drain. Stir in the rest of the ingredients. (Tomatoes and corn with their liquid.) Simmer 10 minutes.

Dumplings:

1 1/2 cup Hungry Jack Buttermilk or light pancake mix
1/2 cup crushed corn chips
1 egg
2 tbsp. cooking oil
1/2 cup water

Combine all ingredients in bowl. Mix well. Spoon over bubbling meat mixture. Cover and simmer 15 minutes without removing lid. Dumplings will be puffy and dry on top.
