BOEUF ROULE 
2 lb. round steak or boneless sirloin tips
Salt & pepper
2/3 c. chopped parsley
1/2 c. chopped onion
6 slices bacon
2 c. whole sm. onions
1 c. water
Small skewers or string

Cut steak into individual servings. Sprinkle each with salt and pepper. Place parsley and onions on each piece and roll into a bundle. Wrap each bundle with strips of bacon. Fasten each bundle with skewers or tie with string.

Place in greased baking dish and sear in a hot oven, 500 degrees. Reduce oven temperature to 350 degrees and add 1 cup of water and whole onions. Continue baking until tender. Serve on a platter. Serve gravy separately. Serves 2 to 4.

Turkey Roule can be made by using turkey breasts which have been sliced into turkey "cutlets" for the meat.
