SQUASH BREAD 
3 eggs
1 c. oil
2 c. sugar
3 tsp. vanilla
2 c. raw squash, peeled and seeds scraped out
3 c. flour
1 tsp. baking soda
3 tsp. cinnamon
1/4 tsp. baking powder
1/2 tsp. salt
1/2 c. chopped nuts (optional)

Mix well. Bake at 350 degrees for 1 hour in 2 greased 9 x 5 x 3 bread pans.
