SWEDISH RICE PUDDING 
5 lg. eggs
3 1/3 c. milk
1 1/4 c. cooked rice
1/2 c. sugar
1/2 tsp. salt

Set oven at 350 degrees. Beat eggs slightly; add milk, sugar, salt and rice and mix well. Butter a medium-sized casserole and pour in mixture. Sprinkle with cinnamon. Place casserole in pan of water in oven. After 20 minutes reduce heat to 300 degrees and bake about 1 hour more. Insert knife to test -- when it is done, it will come out clean. Serve with tart fruit sauce or lingonberries (available in Scandinavian specialty stores).
