POPPY SEED CHICKEN 
4 double chicken breasts, cooked, boned & cut into pieces
2 c. sour cream
2 cans cream of chicken soup
1 stick butter, melted
55 Ritz crackers (1 stack + 1/2)
2 tbsp. poppy seeds

Combine sour cream, soup and chicken. Add butter and poppy seeds to crackers; mix well. Spray 9"x13" casserole with Pam. Layer 1/2 crumbs in bottom, then chicken mixture. Top with remaining crumbs. Bake 45 minutes to 1 hour at 325 degrees. Serves 8 to 10.
