ASPARAGUS WITH ORANGE HOLLANDAISE SAUCE | |
1 lb. asparagus, cooked in sm. amount of water, drained HOLLANDAISE SAUCE: 1/2 c. butter in 3 parts 2 egg yolks 1/4 tsp. orange peel 1 tbsp. orange juice 1/8 tsp. salt Dash of pepper 1/4 c. sour cream (add last) Cook, adding 1/3 butter at a time. Low heat until thickened 2 or 3 minutes. Blend in sour cream last. Spoon over asparagus just before serving. |
