ASPARAGUS WITH ORANGE
HOLLANDAISE SAUCE
 
1 lb. asparagus, cooked in sm. amount of water, drained

HOLLANDAISE SAUCE:

1/2 c. butter in 3 parts
2 egg yolks
1/4 tsp. orange peel
1 tbsp. orange juice
1/8 tsp. salt
Dash of pepper
1/4 c. sour cream (add last)

Cook, adding 1/3 butter at a time. Low heat until thickened 2 or 3 minutes. Blend in sour cream last. Spoon over asparagus just before serving.

I love this recipe. Served it to a food snob who said he never had such a wonderful hollandaise. I added a tablespoon of fresh lemon juice and omitted the sour cream. It was delightful. I did find that i had to whisk it all through the process to keep it from breaking. GREAT TASTE.

Nice recipe however this should not be called Hollandaise, the substitution of orange juice for lemon makes this a Sauce Maltaise. Inexperienced cooks will be confused by your ingredient list for Hollandaise.
