DOUBLE CRISPY CHICKEN 
7 c. corn flakes crushed to 1 3/4 c.
1 egg, beaten with 1 c. milk
1 c. plain flour
1/2 tsp. salt
3/4 tsp. pepper
3 lb. frying chicken pieces, washed and dried
3 tbsp. butter, melted

NOTE: Bake at 350 degrees for 1 hour or until chicken is tender.

Put crushed corn flakes in pan. Set aside. In bowl beat egg and milk. Add flour, salt and pepper. Mix until smooth. Dip chicken in batter. Coat with crushed cereal. Place in single layer, in greased or foil lined shallow pan. Drizzle with butter. Don't cover pan or turn chicken while baking. Serves 6.
