YELLOW SQUASH RELISH | |
12 c. grated squash 4 onions, chopped 2 green bell pepper, chopped 2 red bell pepper, chopped 5 tbsp. salt 2 1/2 c. sugar 2 1/2 c. vinegar 2 tbsp. pickling spice 1 tbsp. celery seed 1 tsp. turmeric Combine squash, onion and pepper; cover with salt and let stand overnight. Rinse and drain. Bring sugar, vinegar and spices to a boil, add squash and bring back to a boil for a few minutes. Put in jars and hot water bath for a few minutes. |
