PECAN CRUNCH PUDDING | |
1 c. sugar 1 beaten egg 2 c. chopped pecans 2 med. bananas, sliced 1 (3.75 oz.) pkg. instant vanilla pudding mix 1 c. sour cream 1 c. milk Combine sugar, pecans and egg. Spread on greased cookie sheet very thinly. Bake at 350 degrees for 18-20 minutes. Scrape baked mixture off cookie sheet with a spatula. Put mixture between sheets of waxed paper and, with rolling pin, break it up into fine crumbs. Sprinkle 1/2 the crumbs in an 8x8 baking dish. Combine pudding mix, sour cream, and milk. Beat on low speed 1-2 minutes. fold in sliced banana. Pour into dish with crumb mixture on the bottom. Spoon remaining crumbs over top and refrigerate until served. |
