FLORENTINE FISH 
Any variety of fish: Example: Sole, flounder, salmon, cod, catfish, etc.

FLORENTINE:

1 tbsp. olive oil
3 to 4 cloves garlic

Saute in fry pan until clear.

Add:

1 sm. pkg. frozen spinach

Cook until just defrosted and drain the juice.

Place on fish. Add a sprinkle of grated cheese and some Mozzarella. Roll up and cook the same way. Bake 400 degrees 25 to 30 minutes, depending on thickness of fish.
