TEXAS JAIL HOUSE CHILI | |
3 lbs. coarse ground beef 1/4 c. olive oil 1 qt. water 3 1/2 tbsp. chili powder 10 cloves finely chopped garlic 1 tsp. ground cumin 1 tsp. oregano or marjoram 3/4 tsp. cayenne pepper 3 tbsp. paprika 1 tbsp. sugar 1 tbsp. salt 3 tbsp. flour 6 tbsp. yellow cornmeal 1 c. water Brown beef in olive oil. Add 1 quart water; simmer 1 to 1 1/2 hours; drain fat. Add chili powder, garlic, cumin, oregano or marjoram, pepper, paprika, sugar and salt. Simmer an additional 1/2 hour. Mix flour, cornmeal and 1 cup water together and add to above mixture. Cook (stirring to prevent sticking) about 5 minutes more to see if additional liquid is needed. Serves 6-8. Can be doubled. Freezes well. |
