JERSEY PEACH CAKE 
6 to 7 peaches, peeled and sliced
4 tbsp. sugar
3 tsp. ground cinnamon
3 c. all-purpose flour
2 c. sugar
1 tbsp. baking powder
1 tsp. salt
1 c. light vegetable oil
4 eggs
1/4 c. orange juice
1 tbsp. vanilla extract

Combine peaches, 4 tablespoons sugar and cinnamon; set aside. Stir together flour, 2 cups sugar, baking powder and salt in a large bowl. Add oil, eggs, orange juice and vanilla; beat with a wooden spoon until well blended. Spoon 1/3 of batter into a greased 10 inch tube pan. Drain peaches of moisture. Place 1/2 of peaches on top of the batter. Spoon another 1/3 of batter on top; top with remaining peaches. Spoon remaining batter on top. Bake at 375 degrees for 1 hour and 15 minutes or until done.

12-16 servings.
