CHILLED SHRIMP WITH DILL SAUCE | |
1 qt. water 1 celery stalk 1 carrot Juice of 1/2 fresh lemon 1 tbsp. salt 1/4 tsp. cayenne 1 sm. garlic clove 24 med. to lg. fresh shrimp, shelled and deveined Dill Sauce DILL SAUCE: Chill overnight: 3/4 c. olive oil 3 tbsp. lemon juice 1 tbsp. chopped dill 1/2 tsp. dry mustard Salt to taste 1/2 garlic clove (optional) 1. In a deep saucepan combine all ingredients except shrimp and dill sauce. Boil for 10 minutes. 2. Add shrimp into boiling liquid, return to a boil for 10 minutes. Next drain and discard vegetables and chill the shrimp. 3. When shrimp is chilled, remove from refrigerator and place on platter with dill sauce in center of platter. To make this look special, hollow out a red cabbage and put dill sauce inside. |
