ZUCCHINI BROWNIES 
2/3 c. butter
2 tbsp. hot water
2 c. brown sugar
2 eggs
2 tsp. vanilla
2 c. zucchini, grated
2 c. flour
2 tsp. baking powder
1 tsp. salt
1 c. butterscotch morsels

Melt butter with hot water, add brown sugar, beat well. Let cool. Add egg, vanilla, and zucchini; beat. Add dry ingredients to sugar mixture; beat. Pour into well greased and floured 9 x 13 inch pan. Sprinkle butterscotch morsels on top. Bake at 350 degrees for 1/2 hour.
