PINEAPPLE UPSIDE DOWN CAKE 
1/2 c. butter
1 c. brown sugar
1 can sliced pineapple
1 jar maraschino cherries

Melt butter in large frying pan. Add brown sugar and spread evenly over bottom of pan. Lay complete wheel of pineapple in bottom of pan. Put a cherry in the center of each pineapple.

BATTER:

3 egg yolks (save whites)
1 c. sugar
5 tbsp. pineapple juice
1 c. flour
1 tsp. baking soda

Beat egg yolks. Add sugar and pineapple juice. Sift in flour and baking soda. Beat egg whites until stiff and fold into rest of batter. Pour over fruit and bake in 350 degree oven for 40 minutes to 1 hour. While still hot, remove cake onto platter. Serve when ready. Good hot, warm or cool.
