GUMBO-PARTY POT-CREOLE STYLE | |
1 lg. onion, chopped 1-2 lg. bell pepper, chopped 5-6 green onions, chopped Crab (imitation is okay) 2 to 3 lbs. shrimp, peel and devein 3 to 4 link sausages, sliced 2 chicken, sinned and cut Tony Chacheree's Seasoning Garlic powder 1/2 c. oil 1 c. flour Rice, cooked and set aside Fill large soup pot 3/4 with water. Turn burner on medium under pot. Add onion, bell pepper, and green onion, sausage, and chicken. Cover, bring to boil. In iron skillet, heat oil, add flour to make a loose paste. Season with Tony's. Fry until very dark brown. Stir constantly to prevent sticking and burning. Add by spoonfuls to boiling mixture. Stir thoroughly. Add shrimp and crab. Let simmer until chicken is done. Serve over rice as soup. |
