CANDIED GRAPEFRUIT PEEL 
Peel from 3 to 5 grapefruit (can be stored in freezer until read to use). Cut peel in 1/2 inch strips and cover with cold water. Boil 5 to 10 minutes. Rinse with cold water 4 times. Set aside.

Boil together:

1 c. sugar
1 c. water

Add and thoroughly dissolve 1 (4 ounce) package cherry flavored gelatin. Add drained peel. Simmer until all syrup is absorbed. Spread out overnight on paper towels. Next day sprinkle with sugar and let dry in open 3 days. Store in refrigerator.
