QUICK CHILE RELLENO 
1 lb. Jack cheese, grated or cut into 1/4" cubes
2 cans diced green chilies (4 oz. cans)
3 eggs, beaten
1 can stewed tomatoes (15 oz. can)

In a greased 1 quart baking dish, place half the cheese, then the chile. Pour beaten eggs over chile and cheese. Add stewed tomatoes and top with remaining cheese. Bake at 350 degrees for about 30 minutes or until cheese is slightly browned and mixture is bubbly. Makes 6-8 servings.
