EASY CHEESY MEATLOAF 
1 1/2 lbs. lean ground beef
2 c. bread crumbs (4 slices bread)
1 c. tomato juice
1/3 c. chopped onion
2 eggs
2 tsp. broth (or instant bouillon)
1/4 tsp. pepper
6 slices cheese

Preheat oven to 350 degrees. In large bowl, combine all ingredients except cheese; mix well.

In shallow baking dish, shape 1/2 the mixture into loaf. Cut 4 slices of cheese into strips; arrange on meat. Top with remaining meat; press edges together to seal. Bake 1 hour; pour off fat. Top with remaining cheese slices. Refrigerate leftovers. Makes 6-8 servings.
