DINNER IN A PUMPKIN 
Choose a nice firm medium sized (about 4 lb.) pumpkin. Cut lid, scoop out inside. Draw face with permanent magic marker.

FILLING:

1 1/2 ground beef
3/4 c. chopped celery
1/3 c. chopped green pepper
2 tbsp. brown sugar
1 can cream of chicken soup
1/4 tsp. pepper
1 tsp. salt
3/4 c. chopped onion
1/4 c. soy sauce
1 (4 oz.) can sliced mushrooms
2 c. hot cooked rice

Brown ground beef along with the celery, onion and green peppers. Mix in remaining ingredients. Stuff pumpkin with meat mixture, put on lid and place on foil lined cookie sheet or baking pan. Bake at 350 degrees for about 1 1/2 hours or until pumpkin flesh is tender. Serve pumpkin flesh as a vegetable with each serving of meat casserole. Serves 6 to 8.
