DINNER IN A PUMPKIN 
Wash a medium sized pumpkin. Draw a face on the pumpkin with a permanent marker. Cut an opening in the top of the pumpkin. This will be the serving opening, so it helps to have a large opening. Remove seeds (save these to roast) and clean out inside of pumpkin. Prebake in greased cake pan at 350 degrees for 1/2 hour.

1 1/2 lbs. ground beef
1/2 c. chopped celery
2/3 c. chopped onion
1/3 c. diced green pepper
1/2 tsp. salt
1/4 tsp. pepper

Brown ground beef. Drain. Add salt and vegetables. Cover and simmer over low heat for 5 to 10 minutes.

1/4 c. soy sauce
2 tbsp. brown sugar
1 sm. can of drained sliced mushrooms
1 can cream of chicken soup
2 c. hot cooked rice

Spoon mixture into pumpkin. Replace lid and bake for about an hour or until the pumpkin is tender.
