YELLOW RICE AND CHICKEN 
1 chicken or parts cut up
1 lg. onion
1 green pepper
3 cloves garlic
4 oz. pimentos
Salt
3 oz. olive oil
2 c. white rice
1 env. Vigo flavoring
1/4 tsp. saffron

Boil salted chicken parts in 5 cups of water, until done, cool, debone and save broth.

Saute in olive oil, onion, garlic, and pepper. Add chicken and broth bring to boil. Add vigo flavoring and coloring, rice, pimentos and saffron. Simmer 20 to 30 minutes.
