Sweet potatoes

Peel and wash sweet potatoes. Cut in very thin slices and place in 1/4 inch hot oil. Brown and turn on other side. When that side is brown, place on paper towel and sprinkle with sugar. Watch potatoes constantly as they cook, as they brown very quickly.
