FUNNEL CAKE 
2 eggs
2 c. flour
1 tsp. baking powder
1 1/2 c. milk
1/2 tsp. salt
2 c. vegetable oil (to fry cakes in)

Combine eggs and milk. Sift dry ingredients together and add to egg mixture. Beat until smooth. Milk or flour may be added if too thick or thin. Heat oil to 350 degrees. Pour 1/2 cup batter into hot oil. Fry until brown (about 5 minutes). Turn and fry 1 minute. Drain on paper towels. Turn in sugar or powdered sugar.
