FUNNEL CAKES 
2 1/2 c. self-rising flour
1/4 c. sugar
1 1/3 c. milk
2 eggs, lightly beaten
Oil for frying (peanut oil is good)
Sifted confectioners' sugar

Combine flour, sugar, milk and eggs in bowl, beat until smooth. Heat 1/2 inch oil to 375 degrees in electric skillet. Pour 1/4 cup batter into funnel. Drizzle into hot oil in spiral pattern, controlling flow with finger. Fry for 1 minute on each side or until golden brown; drain on paper towel. Sprinkle with confectioners' sugar. Yield: 1 dozen. (Leftover batter can be stored in refrigerator for later use.)
