SHRIMP AND BELL PEPPERS 
3 tbsp. olive oil
1 1/2 lb. med. shrimp
4 tbsp. unsalted butter
6 green onions, chopped
1/4 tsp. cayenne pepper
2 green peppers, chopped
1 red pepper, chopped
4 cloves garlic, minced
3/4 lb. fresh mushrooms, sliced
1/2 c. white wine or chicken broth
1 tbsp. fresh basil, chopped or 1 tsp. dried
Salt and pepper to taste

Heat olive oil in saute pan. Add shrimp and saute just until firm to touch; remove and keep warm. Add butter, green onions, cayenne, green and red peppers, garlic and mushrooms to saute pan; cook over medium high heat for 2 minutes. Add wine or broth and reduce cooking liquid by half.

Return shrimp to saute pan and combine with vegetable mixture. Add basil, salt and pepper. Serve over white, brown or wild rice. 4-5 servings.
