ZUCCHINI RIPIENE 
3 med. straight or plump zucchini
1 lb. hamburger
3 tbsp. oil
1/2 c. onion
1 tsp. salt
1/2 tsp. pepper
1/4 tsp. oregano
1 c. tomato sauce

Wash zucchini, cut in half lengthwise, scoop out pulp and chop it. Reserve shell. Heat 2 tablespoons oil in skillet, saute onion 5 minutes. Mix in pulp and saute 5 minutes. Add beef and cook until not pink. Mix in salt, pepper, and oregano. Stuff shells. Arrange in baking dish. Sprinkle with remaining oil. Cover with tomato sauce. Bake at 350 degrees for 40 minutes. Delicious!!
