2/3 c. cold mashed potato
1 oz. square of chocolate, melted
1 tsp. instant coffee powder
1/4 tsp. salt
1 lb. confectioners' sugar
1/2 lb. shredded coconut

Combine first 4 items, then work in the sugar, then the coconut. Form in mounds on a cookie sheet and chill in the refrigerator to harden. Makes about 1 1/2 pounds of candy, and is perfect for a gift.
