FRIED OYSTERS 
1 c. cracker meal
1/2 c. cornmeal
1/4 tsp. salt
1/8 tsp. pepper
1 (12 oz.) container fresh Select Oysters, drained
2 eggs, beaten
Vegetable oil

Combine cracker meal, cornmeal, salt and pepper in a medium bowl. Dip oysters in egg; then dredge in meal mixture. Fry oysters in deep, hot oil (375 degrees) for 1 1/2 minutes or until golden, turning once. Drain on paper towels; serve immediately. Yield: 4 servings.
