EGG SALAD AND BOLOGNA ROLLS 
8 hard-cooked eggs, chopped
1/4 c. chopped green pepper
2 tbsp. chopped stuffed olives
1/4 c. mayonnaise
1 tsp. mustard
1/2 tsp. salt
6 slices bologna
6 hamburger rolls
6 lettuce leaves
butter
6 pickles

Make egg salad: In medium bowl, combine chopped eggs, green pepper, olives, mayonnaise, mustard, and salt; mix well with fork.

Cut tops off rolls; hollow bottoms slightly. Place a lettuce leaf in each hollow; top with bologna slice and about 1/3 cup egg salad. Butter tops, and set on salad at an angle; garnish each with a pickle. Refrigerate until needed. Makes 6.
