BLACK WALNUT COOKIES 
1 egg (or 2 egg whites)
1 c. brown sugar
1 tsp. vanilla
1/2 c. flour
1/4 tsp. baking soda
1/4 tsp. salt
1 1/2 c. chopped black walnuts (or English walnuts)

Preheat oven to 350 degrees. Beat egg until light and fluffy. Add sugar and vanilla, stir until smooth. Stir in flour, baking soda and salt. Blend in nuts. Drop by teaspoonfuls onto greased baking sheet. Bake 7 to 9 minutes. Do not over bake. Cool a few minutes; then remove carefully. 4 dozen.
