CHILE MEATBALLS | |
1 can Del Monte zucchini in tomato sauce 1 lb. ground beef 1 onion, minced 1/4 c. grated Parmesan cheese 1/4 c. ketchup 1 egg 1 tbsp. garlic powder 2 tsp. salt 2 tbsp. chili powder 1 tbsp. dried Italian herbs or oregano Pepper to taste Bread or cracker crumbs Mix all ingredients except zucchini. Shape into meatballs and brown. Pour off excess fat. Add can of zucchini and simmer for 15 minutes. Serve over rice. Serves 4. This is a wonderful main course, served over rice. Also an excellent party food, served in a chafing dish with toothpicks. |
