OATMEAL MUFFINS 
1 c. all-purpose flour
1 c. quick-cooking rolled oats
1 tbsp. baking powder
1/2 tsp. cinnamon
1 egg, slightly beaten
1 c. milk
1/4 c. cooking oil
1/4 c. honey
1/2 c. ripe bananas, mashed
1/2 c. raisins, chopped apricots, dates or prunes or dried fruit bits

STEP 1: In a mixing bowl, stir together flour, oats, baking powder and cinnamon. Make a well in the center.

STEP 2: In another bowl, combine egg, milk, cooking oil, honey and banana. Add all at once to flour mixture. Stir just until moistened. Batter will be lumpy.

STEP 3: Fold in raisins, apricots, dates or prunes. Line or grease 2 1/2 inch muffin cups and fill 3/4 full. Bake in a 400 degree oven for 20 minutes. Makes 12.
