TOMATO BEEF STEW | |
1 lb. beef cubes 2 tbsp. flour (season flour with 1/2 tsp. salt & 1/8 tsp. pepper) 2 tbsp. shortening 1 can Campbell's tomato soup 1 soup can water 6 sm. onions 6 sm. carrots, cut in half 3 potatoes, quartered 1/4 tsp. whole thyme Roll meat in flour. Brown in shortening in large heavy pan. Add soup and water. Cover, simmer 1 1/2 hours, stir now and then. Add remaining ingredients. Cover, cook until vegetables are tender, about 1 hour. Cook uncovered for last 10 minutes to thicken. 4 to 6 servings. |
