STUFFED ZUCCHINI 
1 (4-5 lb.) zucchini
1 1/2 c. bread crumbs
2 eggs, beaten
1 jar tomato sauce
1/3 c. grated Parmesan cheese
1 lb. ground beef, may substitute turkey or pork
Garlic powder to taste
2 sm. onions, diced

Cut zucchini in half lengthwise scoop out center, throw out seeds and parboil zucchini pieces. Pan fry ground beef seasoned with garlic and onion; drain oil off. Stuff zucchini with beef, pour tomato sauce on top and sprinkle cheese. Bake at 350 degrees for 45-60 minutes.
