COUNTRY SPINACH SALAD | |
1/2 c. mayonnaise 1/2 c. sour cream 10 oz. spinach, rinsed, steamed, and torn into pieces 2 hard cooked eggs, diced 1 red Delicious apple, unpeeled, cored and diced 1/2 sm. red onion, sliced into thin rings 1/4 lb. blue cheese, crumbled 6 to 8 servings. In salad bowl, combine mayonnaise and sour cream; mix well. Add spinach, eggs, apple, onion and blue cheese. Toss well. |
