MOM'S ROLLS 
1 c. scalded milk
1/2 c. lard
1 cake yeast dissolved in 1/2 c. lukewarm water and
1/2 tsp. sugar and let rise
3/4 c. sugar
1 tsp. salt
5 c. flour
3 eggs
1 c. mashed potatoes

Put scalded milk in mixing bowl. Add lard so it will melt. Cool. Add yeast mixture. Add potatoes, eggs, sugar and salt. Add 4 cups flour. Toss dough on board and knead in last cup of flour.

Place in large greased bowl. Cover. Let stand in refrigerator overnight or longer. To form into rolls, take a very small piece and roll like a weiner. Dip into melted butter, then into sugar and cinnamon mixture, twist into a roll. Place into greased muffin tins. Let rise 4 to 5 hours. Bake in a 350 degree oven for 15 minutes. Muffin tins should be well greased. Remove from tins at once. You may use butter or 1/2 butter and 1/2 butter. Once made they will be the family's favorite! Makes 5 dozen.
