SPICY APPLE DUMPLINGS 
4 firm baking apples
2 tbsp. butter
1/4 c. granulated sugar
1/2 tsp. ground nutmeg
1/4 c. walnuts, chopped (or almonds)
1 egg, beaten
Sliced almonds

CRUST:

1 c. flour
1/2 tsp. salt
1/3 c. butter
3 to 4 tbsp. ice water

VANILLA SAUCE:

1/2 c. sugar
1 tbsp. cornstarch
1 c. water
2 tbsp. butter
1 1/2 tsp. vanilla

PASTRY: Mix flour and salt, cut in butter. Sprinkle with ice water, tossing with fork until dough holds together. Form to ball. Cover, chill. Pare and core apples. Mix butter, sugar, nutmeg and nuts. Divide mixture among apples, stuffing mixture into cores. Divide pastry into 4 equal portions. Roll out each to a large circle. Place apple in center. Brush edges with water. Bring up ends. Pinch and seal. Brush with egg. Sprinkle with almonds. Bake on baking sheet at 350 degrees 45 minutes.

SAUCE: Combine sugar, cornstarch and water in saucepan. Boil 1 minute or until thick. Stir in butter and vanilla. Pour over hot dumplings.
