CHICKEN SALAD 
Shred 1 sm. head of lettuce
2 precooked chicken breasts
1 green onion
1/2 c. toasted almonds

DRESSING:

2 tbsp. sesame seeds, toasted 7 partially crushed
2 tbsp. sugar
1/2 tsp. salt
1/2 tsp. pepper
1/4 c. salad oil
3 tbsp. vinegar, white
2 oz. bean threads

Deep fry bean threads in hot vegetable oil. Be careful, these puff up instantly. Mix all ingredients, adding dressing and bean threads just before serving. Serves 6.
