COOKED BEAN SPROUTS 
3/4 c. water
4 c. sprouted beans
Salt
Soy sauce

Bring water to a boil. Add beans. Simmer, covered until almost soft, just long enough to remove the raw bean flavor. Season with salt and soy sauce. Bean sprout, fresh or cooked, immediately recall the Chinese-American cuisine and suggest such added ingredients as chicken, shrimp, scallions, mushrooms or water chestnuts. 8 servings
