FRESH PEACH PIE 
Pastry for one 9-inch 2-crust pie
5 c. sliced fresh peaches, about 9 med. peaches
1 tsp. lemon juice
1 c. sugar
1/4 c. all-purpose flour
1/4 tsp. cinnamon
2 tbsp. butter

Preheat oven to 425 degrees. Prepare pie pastry. Mix peaches and lemon juice. Stir together sugar, flour and cinnamon. Mix with peaches. Turn into pastry-lined pie pan and dot with butter. Cover with top crust which has been cut with slits. Seal and flute edges of pie. Cover edges with 2-3 inch strip of aluminum foil to prevent excessive browning. Remove foil during last 15 minutes of baking.

Follow recipe for 9-inch pie except substitute 2 cans (1 pound 13 ounces each) sliced peaches, drained and decrease the amount of sugar to 1/2 cup.
