STRAWBERRY JELLO SALAD
2 sm. pkg. strawberry Jello
2 c. boiling water
1 (1 lb.) pkg. frozen strawberries
12 oz. sour cream (light sour cream works fine)

Dissolve Jello in boiling water. Add strawberries just before Jello starts to thicken. Put part of Jello in large size tupperware ring mold. Set in refrigerator until Jello is solid. Spread this layer with sour cream. Cover with the rest of the Jello mixture which hopefully has not hardened. (If it has hardened too much put it in the microwave for a few seconds.) Refrigerate. When ready to use unmold carefully. Can be made 2-3 days ahead.

Note: Additional fruits - crushed pineapple and mashed bananas, may be added along with the strawberries, if desired. When unmolded, this salad looks very festive. Serves 20-24.

Since microwave ovens vary in power, you may need to adjust your cooking time.
