1 c. cooking oil
2 eggs, beat until foamy
2 c. sugar
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking soda
4 c. apples, chopped (peeled and cored)
1 tsp. vanilla
2 c. flour

Combine all ingredients in a large mixing bowl. Pour into a greased and sugared bundt pan. Bake at 350 degrees for 1 hour. Cool cake thoroughly before removing from the pan.
