LONG ISLAND BROCCOLI SOUP | |
6 chicken broth 1 lg. bunch broccoli, trimmed 2 med. potatoes, cubed 1 1/2 tbsp. parsley 1 rib celery, sliced 2 onions, chopped 1 bay leaf 3 whole cloves 1/2 tsp. salt 1/2 tsp. pepper 1/3 c. heavy cream or half and half Trim broccoli leaving 2 inch stalks. You should have 1 pound broccoli when trimmed. Place all ingredients in 4 quart saucepan except cream. Quickly bring to boil then turn down heat to simmer about 40 minutes. When cooled, remove bay leaf and cloves. Using mixer, mash potatoes and broccoli. Put liquid and mashed ingredients into blender and blend until smooth. If too thick, add more chicken broth. When smooth, add cream. Serves 6. |
