CHICKEN BAKED WITH RICE 
1 c. UNCLE BEN'S® rice
2 fryers. quartered (or 5 or 6 legs)
1/2 pkg. dry onion soup mix
1 can mushroom soup
3 cans chicken broth

Grease large baking dish (9x13 inches and at least 2 inches deep). Sprinkle rice on bottom of pan. Place chicken on rice, do not overlap; then salt and pepper (not too much). Sprinkle 1/2 package onion soup mix over rice and chicken. Spoon on can of mushroom soup. Add 2 cups chicken broth. Bake in 350 degree oven for 1 hour. Remove from oven. Pour remaining 1 cup broth over chicken. Cover with lid or foil and bake 45 minutes. Check while baking and add broth or water as needed.
