1 lb. shrimp 16 oz. can peeled tomatoes 2 cloves garlic 2 tbsp. parsley, fresh 1/2 tsp. basil 1/4 tsp. oregano 8 tbsp. butter 1 tbsp. UZO 1 tbsp. brandy 1 med. onion Feta cheese (4-8 oz.) Saute garlic and onions in 4 tablespoons butter. Add tomatoes and herbs; simmer 30-40 minutes. Saute shrimp in tablespoon butter until pink (3 minutes) add 1 tablespoon brandy and UZO and flambe. Remove from heat. Cover bottom of baking dish with some sauce. Add shrimp and add remaining sauce. Crumble feta cheese over entire dish. Bake at 350 degrees until cheese melts. Serve over rice. |
