POTATO CANDY 
1 med. potato
1/2 tsp. vanilla
2 boxes powdered sugar
1 (1 lb. 2 oz.) jar peanut butter

Cook potato until soft. Peel and slice in a large bowl. Add vanilla. Using fork, mash potato and vanilla together. Add sugar and mix well. Roll to 1/4 inch thick on a board with powdered sugar. Spread with peanut butter. Roll jelly fashion. Slice thin. Refrigerate until hard. Makes 60 pieces.
