FRESH BROCCOLI SALAD 
1 bunch fresh broccoli, cut into flowerets (about 1 1/2 lb.)
1 c. thinly sliced carrots
1 c. (4 oz.) shredded Cheddar cheese
8 slices bacon, cooked & crumbled
1/2 c. mayonnaise
2-3 tbsp. sugar
1 1/2 tbsp. red wine vinegar

Place broccoli in a colander and plunge into boiling water for 10 seconds. Drain and dip into ice water. Combine broccoli, carrots, cheese and bacon; gently toss.

Combine mayonnaise, sugar and vinegar; mix well. Add mayonnaise mixture to broccoli mixture; toss well. Chill. Serve on lettuce leaves, if desired. Yield: 10-12 servings.
